How Freeze Drying Preserves the Freshness and Flavour of Candy

Freeze-drying is, in our expert opinion, the very best food preservation method there is. It’s fresh, it’s sweet, and best of all, it lasts for years – and stays just as delicious the whole time.

But you might be wondering, how in the world does freeze drying preserve the freshness and flavour of candy? In this blog, we’re going to explain the freeze-drying process and how this process preserves the taste and freshness of all your favourite foods. So, keep reading to find out!

Freeze-drying is a three step process, involving freezing, sublimation, and adsorption. In the first step, the food is frozen so all the water in it turns to ice. In the next step, sublimation, the temperature inside the machine is raised at the same time the pressure is lowered. This creates a vacuum that removes about 95% of the water content from the food. In the last step, adsorption, the temperature is raised even higher so the rest of the water content can be removed.

After these three steps, you’re left with a light, airy, and delicious new snack. But not just any snack – this is a snack that can now last for up to 25 years!

When food goes bad, it’s normally due to the growth of bacteria, yeast, or mold. But these organisms can only grow when they have access to water. Since the freeze-drying process removes almost all of the water content in a piece of food, bacteria, yeast, and mold don’t have what they need to grow. This means that your freeze-dried foods won’t spoil for years!

Now, it is important to note that freeze-drying doesn’t get rid of the bacteria, mold, or yeast in a food. It simply makes them dormant and unable to grow, almost like they’re going into hibernation.

But regardless, what you’re left with is a delicious piece of food that won’t go bad for decades. This means your freeze-dried candy will taste just as yummy 20 years from now as it does today. This is much longer than other popular food preservation methods like dehydration, which can typically only preserve your food for up to a year (at best!). This is because dehydration normally removes between 85 - 95% of the food’s water content, whereas freeze-drying removes up to 99%! That extra bit of water removed gives you years of perfect preservation.

But freeze-drying doesn’t just preserve the freshness of your food or candy. It also preserves its sweetness!

Freeze-drying removes the water content from food, but it doesn’t remove any of the sugars or flavours. In fact, after the water is removed, the sugars actually become more concentrated. This is why you’ll often find freeze-dried candy or fruit tastes even sweeter than the original candy or fruit – without the water to dilute the flavour, you get pure sweetness with every bite.

If you’re looking for a way to preserve your food for decades, while still maintaining its freshness and flavour, you have to give freeze-drying a try. It really is the best way to get long-lasting, but equally delicious candy.
