How Freeze Drying Preserves the Freshness and Flavour of Candy

Freeze-drying is a three step process, involving freezing, sublimation, and adsorption. In the first step, the food is frozen so all the water in it turns to ice. In the next step, sublimation, the temperature inside the machine is raised at the same time the pressure is lowered. This creates a vacuum that removes about 95% of the water content from the food. In the last step, adsorption, the temperature is raised even higher so the rest of the water content can be removed.

When food goes bad, it’s normally due to the growth of bacteria, yeast, or mold. But these organisms can only grow when they have access to water.
